During these hot summer afternoons, few foods are as equally refreshing and filling as salads. No, I’m not talking plain old Caesar or Cobb. The tastiest recipes have the most unexpected ingredients. Two Peas and Their Pod blogger Maria Lichty suggests “Chickpea, Avocado, and Feta Salad. It takes 5 minutes to make and is always a hit.” For a heartier mix? Try “fruit, nuts, quinoa, pasta, beans, and different cheeses… I love salads that are full of texture.”

Before you hit the farmers’ market, fill your cabinets with the proper prep essentials. Maria says, “Salad spinners make washing greens a breeze and, when used as storage, keep them fresher longer.”

We get it. You hear “slow cooker” and think, Come on, I know how to use a pot. Well, it’s time to revisit your just-out-of-college days, because these crowd-pleasers might just be the dose of easy your hectic life is craving. All you do? Throw in the ingredients, then go be productive (or not) for six to eight hours. Seriously, it’s that simple.

Slow Cooker Recipe

First steamy recipe on our list? Slow Cooker Chicken and Wild Rice Soup from the blog Two Peas and Their Pod. “The soup has onion, garlic, carrots, celery, chicken, wild rice, broth, thyme, and parsley,” writes blogger Maria. “It’s healthy, comforting, and delicious.”

Your Cup Noodles days may be in the past, but keep one of these feast masters in the pantry. You’ll thank us later.

Our go-to foodie bloggers, Maria and Josh from Two Peas and Their Pod, have taken one kid-favorite recipe and transformed in into a fall dinner-party must-have. Enter: Butternut Squash Mac ‘n’ Cheese.

“If you are a little skeptical about adding butternut squash to your mac ‘n’ cheese. Don’t be,” Maria writes. “Josh roasted the butternut squash before pureeing it to bring out the best flavors. He used aged white cheddar and sharp cheddar cheese. He also added in chopped fresh rosemary and topped the mac ‘n’ cheese with whole wheat breadcrumbs.”

Creamy and filling, serve it on any fall evening or turn it into a tradition at Thanksgiving dinner.

If we’re skilled at anything here at Rue, it’s finding ways to transform perfectly wholesome ingredients into sweet and creamy desserts. (A seriously covetable talent, we think.) This week, we’re working our magic on these Peanut Butter Apple Bars, courtesy of blog favorite Two Peas and Their Pod.

Sure, you could have the traditional apple slices and peanut butter. Or, you could swap in gooey bars packed with chunky apples and drizzled with a peanut-butter glaze. We know, decisions are difficult.
