Savoring Summer: Gotta-Eat-‘Em Fruits & Veggies

During the summer I’m all about meals made with super fresh produce. But these four fruits and veggies are tops for summer’s local bounty, packed with good-for-you nutrients and big, bold flavors. The next time you’re at the farmers market or grocery store, pick up these four ingredients and take advantage of the season’s best bites. Bonus: you’ll make your coworkers jealous with your incredibly delicious-looking (and healthy) lunch.

Watermelon
This is the season to indulge in watermelon. My favorite way to eat it? Paired with balsamic vinaigrette dressing. I am 100% convinced that there’s no better way to eat watermelon, and when you add feta cheese and spinach to turn this into a salad, holy taste-bud explosion.

Tomatoes
The secret behind tomatoes? They’re like an instant cleanse. Since they naturally contain water, you can chomp on these all day and feel like you’re helping trim your waistline. Chop ‘em up and lightly salt them for an afternoon snack, or just make this mouthwatering tomato tart.

Peaches
I have been drooling about these peach, bacon, and cheese paninis ever since I stumbled on the recipe. And while I haven’t made it yet, I’ll probably dream about it every night until it actually makes it into my kitchen. Too much work to make a panini? Try your own version of peach shortcake, or simply slice and top with a bit of whipped cream for a super indulgent, sweet dessert.

Corn
The only time I really ever curse my tiny-apartment-in-the-middle-of-the-city living situation? It’s when I think about how I don’t have a grill and can’t make grilled corn for, um, every single meal. But if I did, I’d eat it as corn hash for breakfast, with avocado for lunch, and just quite possibly, with fettucini for dinner.
